This is a 25-30oz fillet with a deep rich red color grown in mountain spring water around the base of Mt. Lassen. This may look like a salmon fillet, but the taste is milder which leaves seasoning options limitless. Marinades or brines are often used, or you can simply throw on a few of your favorite seasonings and enjoy. Common cooking methods include, grilling, baking, or sautéing. These fillets are also great when cook on cedar planks or smoked using your favorite marinade.
