In this assortment of locally-sourced fish you will receive:
1, 25-30 ounce steelhead fillet with a deep rich red color grown in mountain spring water around the base of Mt. Lassen. This may look like a salmon fillet, but the taste is milder which leaves seasoning options limitless. Marinades or brines are often used, or you can simply throw on a few of your favorite seasonings and enjoy. Common cooking methods include, grilling, baking, or sautéing.
1, 1 lb package of ground steelhead (great for fishcakes/ burgers, dumplings, meatballs and more!)
1, 4-pack Sturgeon Fillets (6 oz each) farm raised, Mt. Lassen White Sturgeon Fillets are remarkably mild and have a delicate, sweet flavor. Prepare Sturgeon as you would any fish by baking, poaching, steaming or broiling. Sturgeon pairs well with sharp and tangy flavors like horseradish, vinegar and citrus.
1, 20-30oz whole, dressed rainbow trout raised in mountain spring water around the base of Mt. Lassen. Mt. Lassen trout is very mild flavored with a firm texture. It easily takes on the flavors and spices used while preparing it. It can be grilled, baked or pan-fried. This fish is also amazing smoked.
